Easy Cheesy Cauliflower Keto Casserole

1 cup shredded Cheddar cheese

½ cup heavy cream

salt and freshly ground black pepper to taste
Instructions
Begin by preheating your oven to 400°F (200°C).
Bring a large pot of lightly salted water to a boil. Cook the cauliflower until it's tender yet still firm to the bite, about 10 minutes. Drain and then transfer the cauliflower to a small baking dish.
In a bowl, mix together Cheddar cheese, cream, salt, and pepper. Pour the cheese mixture over the cauliflower, covering it evenly.
Place in the preheated oven and bake until the cheese is melted, bubbly, and golden brown, approximately 25 minutes.

Feel free to experiment with different types of cheese. I usually use whatever cheese I have leftover in the fridge.
