Easy Roasted Cornish Hens

4 Cornish game hens

2 limes, halved

2 teaspoons olive oil

¼ teaspoon chili powder

¼ teaspoon ground cumin

kosher salt and ground black pepper to taste
Instructions

Preheat your oven to 425°F (220°C).

Squeeze the juice of a lime over each hen. Drizzle with olive oil, then season with chili powder, cumin, kosher salt, and black pepper. Arrange the hens on a rack inside a shallow roasting pan.

Roast the hens in the preheated oven for 15 minutes.

Lower the oven temperature to 350°F (175°C).

Continue roasting until the hens are cooked through, with clear juices and no pink near the bone, about 30 more minutes. The internal temperature should reach 165°F (74°C) when measured at the thickest part of the thigh. Remove from the oven, cover loosely with aluminum foil, and let the hens rest for 10 minutes before carving.
