Egg Foo Young: A Savory Chinese Omelette

Ingredients Required

1 teaspoon sesame oil

1 cup chopped onion

¼ cup chopped green onion

½ cup chopped celery

1 cup bean sprouts

¼ teaspoon cornstarch

½ pound shrimp, peeled, deveined and roughly chopped

2 tablespoons soy sauce

1 teaspoon salt

8 eggs, well beaten
Instructions

Heat sesame oil in a skillet over medium heat. Sauté the onions, celery, and bean sprouts until tender. Stir in cornstarch, followed by the shrimp, soy sauce, and salt. Mix thoroughly, then remove from heat and transfer to a bowl.

Place the skillet back on the heat and pour in the beaten eggs. Gently stir as the eggs cook. Once the eggs are still slightly liquid, add the vegetable and shrimp mixture back into the pan. Continue to cook until the eggs are fully set and golden.
