Eggplant and Goat Cheese Lasagna Delight

1 large eggplant, sliced into 1/4 inch rounds

1 (28 ounce) jar garden vegetable pasta sauce

1 (11 ounce) log goat cheese, sliced
Instructions

Preheat the oven to 350°F (175°C).

Lightly grease a 9x13-inch baking dish with cooking spray.

Lay one quarter of the eggplant slices evenly at the bottom of the dish.

Top the eggplant with one quarter of the pasta sauce.

Add one quarter of the goat cheese slices on top of the sauce.

Repeat these layers three more times, finishing with a final layer of goat cheese on top.

Bake in the preheated oven until the sauce is bubbling and the goat cheese has melted, about 45 to 60 minutes.
