Adobo Chicken with Ginger

Ingredients

1 (3 pound) whole chicken, cut into 8 pieces

¾ cup distilled white vinegar

½ cup soy sauce

2 tablespoons thinly sliced fresh ginger root

½ tablespoon black peppercorns

1 bulb garlic, peeled and crushed

2 bay leaves
Instructions

In a Dutch oven, combine the chicken with vinegar, soy sauce, ginger, peppercorns, garlic, and bay leaves. Bring the mixture to a boil over medium heat. Once boiling, lower the heat, cover, and let it simmer for 30 minutes, occasionally basting the chicken with the sauce.

Remove the lid and continue simmering until the sauce reduces by half, which should take about 5 to 10 minutes. Check the chicken's temperature with an instant-read thermometer inserted near the bone; it should reach 165°F (74°C).

Once the chicken is done, transfer it to a serving dish. Strain the sauce to remove any solids, including the bay leaves.

Serve the chicken hot, generously drizzled with the strained sauce.
