Eggplant Lasagna

2 large eggplants, peeled and sliced into 1/2-inch rounds

1 pound ground beef

48 ounces chunky tomato sauce

2 cups shredded mozzarella cheese
Directions
Preheat your oven to 375°F (190°C). Lightly grease two baking sheets and a 9x13-inch baking dish with 1 teaspoon of olive oil.
In a shallow dish, whisk together the eggs and water. In another shallow dish, mix together the Parmesan cheese, breadcrumbs, salt, and pepper.

Coat the eggplant slices in the egg mixture, then press them into the breadcrumb mixture. Lightly tap off any excess crumbs. Arrange the breaded eggplant slices on the prepared baking sheets.

Place the eggplant in the preheated oven and bake until the bottoms turn golden brown, about 20 to 25 minutes. Flip the eggplant slices and continue baking until they are tender, another 20 to 25 minutes. Set them aside.

Raise the oven temperature to 400°F (200°C).
Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the ground beef, seasoning it with salt and pepper. Cook, stirring occasionally, until the beef is browned and crumbled, about 10 minutes. Drain any excess grease. Stir in the tomato sauce, bring to a simmer, and then set the sauce aside.

Layer 1/3 of the eggplant slices at the bottom of the prepared baking dish. Top with 1/3 of the meat sauce.

Sprinkle 1/3 of the mozzarella cheese over the sauce layer. Repeat this process two more times, finishing with a top layer of mozzarella cheese.

Bake in the preheated oven until the cheese is melted and the sauce is bubbling, about 10 to 15 minutes. Allow to cool for 5 minutes before slicing.
