Eggplants of Summer Nights
Ingredients Needed

2 large eggplants

½ cup olive oil for frying

2 medium onions, chopped

2 cloves garlic, minced

2 small tomatoes, chopped

1 green bell pepper, seeded and chopped

1 tablespoon chopped fresh parsley

salt and pepper to taste

4 cups dry bread crumbs

1 cup crumbled feta cheese
Instructions

Start by trimming the tops off the eggplants, then slice them lengthwise. Carefully scoop out the center of each eggplant to create a 'canoe' shape, leaving a half-inch border. Chop the scooped-out eggplant and set aside.

Preheat your oven to 350°F (175°C).

Heat olive oil in a large pan over medium heat. Add the onions and garlic, and sauté for a few minutes until softened. Add the chopped eggplant and cook for another 5 minutes, until tender. Stir in the tomatoes, green bell peppers, and parsley, and let simmer for 10 minutes.

Remove the skillet from the heat, and transfer the mixture to a large bowl. Stir in breadcrumbs to bind the ingredients together. Fill each eggplant shell with the mixture, and top with crumbled feta cheese. Arrange the stuffed eggplants on a baking sheet.

Bake for 15-20 minutes, or until the tops are golden and the cheese is melted. Serve hot or chilled — I personally enjoy them cold.
