Farmer's Market Veggie Quesadillas

½ cup chopped red bell pepper

½ cup chopped zucchini

½ cup chopped yellow squash

½ cup chopped red onion

½ cup chopped mushrooms

1 tablespoon olive oil

cooking spray

6 (9 inch) whole wheat tortillas

1 ¼ cups shredded reduced-fat sharp Cheddar cheese
Instructions

In a large nonstick skillet, sauté red bell pepper, zucchini, yellow squash, onion, and mushrooms in olive oil over medium heat until tender, about 7 minutes. Remove the veggies and set them aside in a bowl.

Spray the same skillet with cooking spray, then place one tortilla in it. Sprinkle 1/4 cup of cheese over the tortilla, add 3/4 cup of the sautéed vegetables on top, and sprinkle another 1/8 cup of cheese over the veggies. Place a second tortilla on top and cook, turning once, until both sides are golden brown, about 2 to 3 minutes per side. Transfer the quesadilla to a cutting board and slice into 8 wedges using a pizza cutter. Repeat with the remaining ingredients. Serve while hot.
