Filet Mignon with Blue Cheese Crust and Port Wine Sauce

4 filet mignon steaks (1 1/2 inch thick)

¾ cup crumbled blue cheese

¼ cup panko bread crumbs
Instructions
In a skillet, melt butter over medium heat. Add the onion, garlic, and thyme, stirring constantly until the onion becomes soft. Pour in the beef broth, scraping the bottom of the pan to release any bits of onion, then add the port wine. Bring to a boil and let it cook down until the sauce reduces to about half a cup. Set aside, or prepare in advance and reheat when needed.
Preheat your oven to 350°F (175°C). Heat some oil in a cast-iron or another oven-safe skillet over high heat. Sear the steaks quickly on both sides until they develop a nice brown crust, then transfer the entire pan into the oven.
Roast the steaks in the oven for about 15 minutes for a medium-rare finish, aiming for an internal temperature of 145°F (63°C). You can adjust the cooking time to reach your preferred doneness if medium-rare isn’t your ideal. Once done, remove from the oven and place the steaks on a baking sheet. Mix the panko breadcrumbs with blue cheese, and generously top each steak with this mixture.
Preheat the oven's broiler. Place the steaks under the broiler until the cheese topping is golden and bubbly, about 3 to 4 minutes. Remove from the oven and allow to rest for at least 15 minutes before serving. Serve with the warm port wine sauce on the side.
