Filet Mignon with Shrimp in Garlic Cream Sauce

2 (4 ounce) 1 1/2 inch thick filet mignon steaks

¼ cup Chardonnay wine

½ pound uncooked shrimp - peeled, deveined, and cut into 3 pieces

¼ cup heavy cream

Instructions

Heat a heavy skillet, preferably cast-iron, over medium-high heat. Coat both sides of each filet with 1 tablespoon of olive oil and season with salt. Place the filets gently into the hot skillet, cooking them until they firm up and the center remains a juicy, reddish-pink color, about 3 to 4 minutes per side. An instant-read thermometer should register 130°F (54°C). Remove the filets from the skillet and let them rest under a loosely covered foil tent.

In the same skillet, melt 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Once the butter has foamed and subsided, sauté the shallots and garlic until softened, about 2 minutes. Add the wine, stirring occasionally, and let it reduce by half, which should take about 3 minutes.

Stir in the shrimp, heavy cream, 1 tablespoon of butter, and a pinch of salt and pepper. Continue stirring until the sauce thickens and becomes velvety, and the shrimp turns pink, about 2 minutes.

To serve, place the filets on dinner plates and spoon half of the shrimp cream sauce over each filet. The sauce will thicken a bit as it cools.
