Ingredients

5 pounds chicken legs and thighs, rinsed and patted dry

¾ cup water

¾ cup white vinegar

¼ cup soy sauce

1 teaspoon white sugar

1 onion, chopped
-
2 cloves garlic, crushed

1 teaspoon whole black peppercorns, crushed

2 bay leaves
-
salt to taste
Instructions
Place the chicken in a 6-quart pot. Pour in the vinegar, soy sauce, and water. Add the sugar, onion, garlic, peppercorns, and bay leaves. Bring to a boil for 2 minutes, then reduce the heat and let it simmer for about 30 minutes, until the chicken is cooked through and juices run clear. The internal temperature of the chicken should reach 180°F (82°C). Once done, remove the chicken and continue simmering the sauce for another 10 minutes, allowing it to thicken. Season with salt.
Return the chicken to the pot, ensuring it is fully submerged in the sauce. Cook for an additional 3 minutes until the chicken is reheated and infused with the sauce.
