Filipino-style Ribs

Ingredients List
-
6 pounds pork spareribs
-
2 medium onions, cut into wedges
-
6 tablespoons soy sauce, divided
-
¼ teaspoon ground black pepper
-
6 whole star anise pods
-
½ cup water
-
1 tablespoon vegetable oil
-
1 medium onion, finely chopped
-
1 tablespoon grated fresh ginger
-
½ cup honey
-
2 tablespoons brown sugar
-
1 tablespoon Worcestershire sauce
-
1 tablespoon lemon juice
Instructions
-
Place the ribs into a large stock pot with the two sliced onions, four tablespoons of soy sauce, pepper, and star anise pods. Add enough water to cover, bring it to a boil, then reduce the heat to medium-low. Cover and simmer for approximately 1 ¼ hours, stirring occasionally, until the ribs become tender when pierced with a fork.
-
In a separate skillet, heat oil over medium heat and sauté the remaining chopped onion until soft. Add the ginger, honey, sugar, Worcestershire sauce, lemon juice, and the remaining two tablespoons of soy sauce. Stir until well combined, then remove from the heat.
-
Preheat the oven to 400°F (200°C).
-
Once the ribs are tender, use tongs to remove them from the stock pot. Arrange them in a single layer in a 11x16-inch baking dish. Brush the ribs evenly with the honey sauce mixture, then bake in the preheated oven for about 30 minutes, basting them with the pan drippings every so often until they are well-glazed.
Cooking Tip
Star anise can be found in most Asian grocery stores and is also available in many regular supermarkets.
