Ingredients Required
Flank Steak Cut:

¼ cup olive oil

¼ cup soy sauce

¼ cup red wine

¼ cup Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 clove garlic, minced

1 teaspoon Italian seasoning

½ teaspoon ground black pepper

1 (1 1/2-pound) flank steak, pounded to 1/2 inch thickness
Filling Mixture:

1 clove garlic, crushed

¼ teaspoon salt

¼ cup chopped onion
-
¼ cup fine dry bread crumbs

1 cup frozen chopped spinach, thawed and squeezed dry

½ cup crumbled feta cheese
Instructions

Marinate the steak: In a large resealable bag, mix together oil, soy sauce, wine, Worcestershire sauce, Dijon mustard, lemon juice, garlic, Italian seasoning, and pepper. Squeeze the bag to blend the ingredients together.

Score the flank steak with small slits about 1 inch apart. Place the steak in the bag, coat with the marinade, remove excess air, and seal. Let it marinate in the refrigerator for 8 hours or overnight.

Preheat the oven to 350°F (175°C) when you're ready to cook.

Prepare the filling: Crush the garlic on a cutting board, sprinkle with salt, and use the flat side of a knife to turn it into a paste.

Remove the steak from the marinade and discard the excess marinade. Place the steak on a work surface and spread the garlic paste evenly on top. Layer with chopped onion, breadcrumbs, spinach, and feta. Roll the steak from one short end to the other, securing with kitchen twine or toothpicks. Transfer to a shallow glass baking dish.

Bake uncovered in the preheated oven until the internal temperature reaches at least 145°F (63°C) at the center, about 1 hour.

Let the steak rest for 5 minutes after removing from the oven. Slice into 1-inch pieces and serve.
