Flavorful Lentil Tacos

⅔ cup finely chopped onion

1 small clove garlic, minced

⅔ cup dried lentils, rinsed

1 tablespoon taco seasoning, or to taste

1 ⅔ cups chicken broth

⅔ cup salsa

12 taco shells
Cooking Instructions

Heat oil in a pan over medium heat. Add chopped onion and minced garlic; cook, stirring occasionally, for about 5 minutes, until softened. Stir in lentils and taco seasoning; cook for another minute.

Pour chicken broth into the pan; bring to a boil. Reduce heat, cover, and let simmer for 25 to 30 minutes, or until lentils are tender.

Remove the lid and cook for an additional 6 to 8 minutes, allowing the mixture to thicken slightly. Lightly mash the lentils and stir in the salsa.

Spoon approximately 1/4 cup of the lentil mixture into each taco shell and serve.
