Fluffy Spinach Quiche

Ingredients

½ cup light mayonnaise

½ cup milk

4 large eggs, lightly beaten

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry

8 ounces shredded reduced-fat Cheddar cheese

¼ cup chopped onion

1 (9 inch) unbaked pie shell
Instructions
Preheat your oven to 400°F (200°C). Place a sheet of aluminum foil on a baking tray to line it.
In a large bowl, whisk together mayonnaise and milk until smooth. Add the eggs and whisk until fully combined; set aside.
Layer spinach, cheese, and onion in the pie shell, creating several layers of each ingredient. Place the pie shell on the prepared baking tray. Carefully pour the egg mixture into the shell and cover the quiche with aluminum foil.
Bake in the preheated oven for 45 minutes. Remove the foil and continue baking for another 10 to 15 minutes, until the top is golden brown and the filling is fully set.
