Garlic and Ginger-Glazed Chicken Wings
Ingredients List
-
cooking spray
-
5 pounds chicken wings, separated at joints, tips discarded
-
3 tablespoons hot sauce (such as Frank's Red Hot)
-
salt and ground black pepper to taste
-
2 tablespoons vegetable oil
-
1 cup all-purpose flour
For the sauce:
-
½ cup rice wine vinegar
-
½ cup packed brown sugar
-
3 crushed garlic cloves
-
2 tablespoons minced fresh ginger
-
1 tablespoon Asian chili paste
-
1 tablespoon soy sauce
Instructions
Preheat your oven to 400°F (200°C). Line two baking sheets with aluminum foil and lightly coat with cooking spray.
Season the chicken wings with hot sauce, salt, and pepper in a large bowl. Add the vegetable oil and toss to coat evenly.
Place the wings and flour in a large, resealable plastic bag. Seal the bag tightly and shake until the wings are completely coated, with no wet spots visible. Transfer the wings to the prepared baking sheets, ensuring they don't touch each other. Lightly coat the wings with cooking spray.
Bake the wings in the preheated oven for 30 minutes, then flip them over. Continue baking for an additional 30 minutes, or until the wings are crispy and cooked through with no pink in the center.
In a saucepan, whisk together rice wine vinegar, brown sugar, garlic, ginger, chili paste, and soy sauce. Bring to a boil, then remove from heat immediately.
Using tongs, toss half of the wings with half of the glaze in a large bowl until they are well-coated. Transfer to a serving platter and let sit for about 5 minutes to allow the glaze to soak into the wings before serving. Repeat the process with the remaining wings and glaze.
