Garlic Butter Shrimp Pasta

Ingredients List

1 pound uncooked linguine

1 tablespoon butter

3 tablespoons white wine

3 cloves garlic, minced

2 teaspoons grated Parmesan cheese, plus more for serving

1 teaspoon chopped fresh parsley, plus more for garnish

salt and pepper to taste

1 pound medium shrimp, peeled and deveined
Instructions
Bring a large pot of salted water to a boil. Cook the linguine in the boiling water until al dente, about 11 minutes. Drain well.
In a medium saucepan, melt butter over medium-low heat. Stir in the wine, garlic, Parmesan, and parsley. Season with salt and pepper. Let it simmer, stirring often, for about 3 to 5 minutes over low heat.
Raise the heat to medium-high and add the shrimp to the pan. Cook for 3 to 4 minutes until the shrimp turns pink, being careful not to overcook.
Portion the pasta into 8 bowls and top each with shrimp and sauce. Finish with a sprinkle of Parmesan and fresh parsley for garnish.

Editor's Tip:
In the Jun/Jul/Aug 2015 edition of Dinogo's "Vegetable Insurgency" article, we added 5 ounces of baby spinach to this dish. To incorporate spinach, add it after the shrimp begins cooking. Remove the pan from heat to allow the spinach to wilt without overcooking the shrimp.
