Garlic-Infused Steak with Roasted Garlic

8 cloves garlic, minced

2 (12 ounce) New York strip steaks

1 ½ tablespoons balsamic vinegar
Instructions
In a small bowl, whisk together garlic, 1 tablespoon of olive oil, salt, and black pepper until the marinade is smooth. Pour the mixture into a resealable plastic bag, add the steaks, and coat them evenly with the marinade. Squeeze out any excess air, seal the bag, and refrigerate for 8 hours or overnight to marinate.
In a small saucepan, combine 12 cloves of garlic with 1 cup of olive oil. Cook over low heat, stirring occasionally, until the garlic turns golden and soft, about 30 minutes. Remove from heat and set aside.
Preheat the grill to high heat and lightly oil the grill grates.
Take the steaks out of the bag, gently blotting away excess marinade with paper towels. Discard the marinade and season the steaks generously with salt and black pepper.
Grill the steaks on the preheated grill for about 5 minutes per side, until they are slightly firm, reddish-pink in the center, and juicy. The internal temperature should reach 130°F (54°C) when checked with an instant-read thermometer. Transfer the steaks to a plate and allow them to rest for 5 minutes.
Drizzle balsamic vinegar over the steaks and top with several cloves of the oil-roasted garlic.
