Gorgonzola & Apple Stuffed Pork Chops

1 tablespoon vegetable oil

4 large boneless pork chops, that can be butterflied

3 tablespoons butter

2 sweet apples of your choice, peeled and chopped

1 ½ cups crumbled gorgonzola cheese
Instructions

Use a sharp knife to carefully butterfly each pork chop by slicing horizontally through the center, leaving one side intact to create a hinge. Open the chop like a book to form a butterfly shape.

Heat oil in a large skillet over medium-high heat. Add the pork chops and reduce the heat to medium. Cook for 5 to 7 minutes on each side, or until cooked to your preferred level. Remove from skillet and set aside.

In a separate skillet, melt butter over medium heat. Add the sliced apples and sauté until tender. Turn off the heat and stir in the Gorgonzola cheese, allowing it to melt into a creamy sauce.

Return the cooked pork chops to the plate and stuff each one with a quarter of the apple and cheese mixture. Serve immediately.
