Grandma's Classic Buttered Noodles

2 large eggs

3 tablespoons butter, melted and cooled

1 ¼ cups all-purpose flour, or more as needed

1 teaspoon salt

¼ teaspoon baking powder
Instructions

In a large bowl, whisk together eggs and melted butter using a fork. Gradually mix in flour, salt, and baking powder until the dough is firm. Knead the dough on a floured surface or in the bowl for a few minutes until fully combined.

Divide the dough into three equal parts. On a floured surface, roll each portion into a thin sheet, about 1/16-inch thick. Lay each sheet on a dry cloth and let them rest for 30 to 45 minutes to partially dry.

Once the dough sheets are slightly dry, roll them into loose spirals one at a time, and cut into strips of your desired width using a sharp knife. Spread the noodles out and let them dry for about an hour before cooking or freezing.

To cook the noodles: Drop them into boiling water or broth and cook for 7 to 10 minutes, or until tender.
Helpful Hints
If using frozen noodles, allow them to thaw in their container before cooking.
