Grandma's Classic Gnocchi

6 russet potatoes

1 cup all-purpose flour

1 egg, lightly beaten

1 tablespoon olive oil

1 pinch salt
Instructions

Bring a large pot of salted water to a boil. Add the potatoes and cook until tender but firm, about 15 minutes. Drain, let them cool slightly, then peel. Season with salt, and mash the potatoes using a fork, masher, or ricer. Transfer to a large bowl, and mix in the egg and olive oil. Gradually knead in enough flour to form a soft dough.

On a floured surface, roll the dough into a long rope. Cut the rope into 1/2-inch pieces.

Bring a pot of lightly salted water to a boil again. Drop the gnocchi into the water, and cook until they float to the surface, about 3 to 5 minutes. Serve with your favorite pasta sauce.
