Greek-Inspired Couscous Salad

¼ cup chicken broth

½ cup pearl (Israeli) couscous

1 cup canned chickpeas (garbanzo beans), rinsed and drained

¼ cup chopped sun-dried tomatoes

2 tablespoons crumbled feta cheese

1 tablespoon white wine vinegar

1 ½ teaspoons lemon juice

1 teaspoon dried oregano

½ teaspoon ground black pepper
Preparation Instructions

In a saucepan, combine water and chicken broth, then stir in garlic and bring to a boil. Add pearl couscous, cover the pan, and remove from heat. Let couscous stand for about 5 minutes, or until the liquid is absorbed. Fluff with a fork and let cool to a warm temperature.

In a large serving bowl, gently toss the couscous with chickpeas, sun-dried tomatoes, olives, and crumbled feta cheese.

For the dressing: Whisk together white wine vinegar, lemon juice, oregano, and black pepper in a small bowl until well blended. Pour over the couscous mixture and toss to combine.
