1 cup uncooked long grain brown rice

1 avocado - peeled, pitted, and diced

¼ cup lemon juice

1 ½ cups diced English cucumbers

¼ cup sliced Kalamata olives

¼ cup chopped fresh mint

Cooking Instructions

Bring the brown rice and water to a boil in a saucepan over high heat. Once boiling, reduce the heat to medium-low, cover, and let it simmer for 45 to 50 minutes until the rice is soft and the water has been absorbed. Remove from heat and fluff the rice with a fork occasionally while it cools.

In a large mixing bowl, combine the avocado with lemon juice. Add the chopped tomatoes, cucumber, feta cheese, onions, olives, mint leaves, olive oil, lemon zest, garlic, salt, and pepper. Gently toss to combine the ingredients evenly.

Carefully fold in the cooled rice, mixing it gently with the other ingredients. Serve immediately, or chill for up to an hour. Note that the salad should be eaten within a day, as the tomatoes and cucumber will release moisture, causing the salad to become watery.
