Grilled Adobo Chicken

1 ½ cups soy sauce

1 ½ cups water

¾ cup vinegar

3 tablespoons honey

1 ½ tablespoons minced garlic

3 bay leaves
-
½ teaspoon black pepper

3 pounds skinless, boneless chicken thighs
Instructions

Preheat your outdoor grill to high heat and lightly oil the grill grate.

In a large pot, combine soy sauce, water, vinegar, honey, garlic, bay leaves, and pepper. Bring to a boil, then add the chicken. Lower the heat, cover, and simmer for 35 to 40 minutes.

Remove the chicken and drain it on paper towels. Discard the bay leaves. Bring the sauce back to a boil and reduce until only about 1 1/2 cups of liquid remains.

Grill the chicken for about 5 minutes on each side, until golden and crispy. Serve with the reduced soy sauce mixture.
