Grilled Cajun Cod

2 (8 ounce) fillets cod, cut in half

2 tablespoons butter

1 lemon, juiced

2 tablespoons chopped green onion (white part only)
Instructions
Prepare all the ingredients before you begin cooking.

Arrange around 15 charcoal briquettes in a pyramid shape on your grill. Optionally, lightly sprinkle the coals with lighter fluid, let them soak for about 1 minute, and then ignite with a match. Wait for the flames to spread across all the coals, roughly 10 minutes, before spreading them evenly in the grill. Let the coals burn until covered with a thin layer of white ash. Lightly oil the grill grates to prevent sticking.
Season both sides of the cod fillets with Cajun spice mix, lemon pepper, salt, and black pepper. Place the fillets aside on a plate to rest.

In a small saucepan, melt butter over medium heat. Stir in lemon juice and green onions, then cook for about 3 minutes until the onions become tender.
