Grilled Chicken Taco Salad
Ingredients Needed

1 (15 ounce) can black beans, rinsed and drained

¾ cup medium-hot salsa

½ cup chopped fresh cilantro

1 tablespoon lime juice

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon brown sugar

¼ teaspoon cayenne pepper

1 tablespoon olive oil

1 pound skinless, boneless chicken breast halves

4 (7 inch) corn tortillas

4 cups shredded lettuce
-
½ cup chopped fresh cilantro

1 avocado - peeled, pitted, and sliced (Optional)

¼ cup sour cream (Optional)

1 lime, cut into wedges (Optional)
Instructions
Heat your outdoor grill to a medium-high temperature and lightly grease the grill grates with oil.
Combine black beans, salsa, half of the cilantro, and lime juice in a bowl, then set the mixture aside.
In a bowl, blend chili powder, cumin, coriander, brown sugar, cayenne pepper, and olive oil until smooth. Rub the spice mix generously over the chicken breasts.
Grill the chicken breasts on the preheated grill for 10 to 12 minutes per side, or until fully cooked and juices run clear. An instant-read thermometer should show at least 165°F (74°C) in the center. While the chicken grills, add the tortillas to the grill and cook until lightly browned, about 3 to 5 minutes per side.
Remove the tortillas from the grill and cut them into thin strips. Set them aside. Slice the chicken into long, thin strips.
Place the lettuce in a large salad bowl and layer with sliced chicken, tortilla strips, black bean salsa, the remaining cilantro, and avocado. Serve with a side of sour cream and lime wedges.
