Grilled Halloumi with a Fresh Berry Herb Salsa

Ingredients Needed

4 ounces fresh blueberries

3 ounces red currants

3 tablespoons chopped fresh mint, divided

3 tablespoons chopped fresh cilantro, divided

1 tablespoon fresh marjoram, stems removed

1 habanero pepper, seeded and minced

2 tablespoons olive oil

2 tablespoons agave syrup
-
2 limes, divided

½ cup cashews
-
8 ounces halloumi cheese, cut into 8 slices
Instructions

Combine the blueberries and red currants in a bowl. Add 2 tablespoons each of mint and cilantro, along with marjoram, habanero pepper, olive oil, agave syrup, and the juice of 1 lime. Stir well and set aside.

Heat a nonstick griddle over medium-high heat. Toast the cashews, stirring frequently to avoid burning, for 8-10 minutes until golden brown. Transfer to a plate and set aside. Lower the heat to medium and cook the halloumi cheese slices, about 2-3 minutes per side, until browned.

Transfer the cooked halloumi to a plate and top with the prepared berry salsa. Garnish with the remaining 1 tablespoon of mint and cilantro, then sprinkle the chopped cashews over the cheese. Add lime wedges from the remaining lime for a fresh touch. Serve immediately.
