Grilled Portobello Sandwich with Basil Mayo
Ingredients Needed

⅓ cup balsamic vinegar

¼ cup olive oil

1 tablespoon minced garlic

6 portobello mushroom caps

½ cup mayonnaise

2 tablespoons chopped fresh basil

1 tablespoon Dijon mustard

1 teaspoon lemon juice

6 kaiser rolls, split, toasted

1 tablespoon butter, softened, or as needed

6 leaves lettuce
-
6 tomato slices
Instructions

Preheat your grill to medium heat and lightly grease the grate.

In a small bowl, whisk together vinegar, oil, and garlic.

Place the mushrooms on a baking sheet with their gills facing up, brush with about two-thirds of the marinade, and let sit for 3 to 5 minutes.

Move the mushrooms to the grill with the gills facing down; grill, occasionally brushing with the remaining marinade, for about 4 minutes on each side until tender.

While grilling, mix mayonnaise, basil, Dijon mustard, and lemon juice in a small bowl. Toast the rolls and butter them, then spread the mayonnaise mixture on each half.

Once the mushrooms are cooked, remove them from the grill and place them on the bottom half of the buns. Add lettuce, tomato, and top with the other half of the bun.
