Grilled Portobello Sandwiches
Ingredients List

2 cloves garlic, minced

6 tablespoons olive oil

½ teaspoon dried thyme

2 tablespoons balsamic vinegar

salt and pepper to taste

4 large portobello mushroom caps

4 hamburger buns
-
1 tablespoon capers
-
¼ cup mayonnaise
-
1 tablespoon capers, drained

1 large tomato, sliced

4 leaves lettuce
Instructions

Preheat your broiler, positioning the rack as close to the heat as possible.

In a medium bowl, combine garlic, olive oil, thyme, vinegar, salt, and pepper.

Place the mushroom caps, bottom side up, in a shallow baking pan. Brush the caps with half of the dressing, then broil for 5 minutes.

Flip the caps over and brush with the remaining dressing. Broil for an additional 4 minutes. Lightly toast the buns.

In a small bowl, combine capers and mayonnaise. Spread this mayo mixture on the buns, and top with the mushroom caps, tomato slices, and lettuce.
