Grilled Shish Tawook Chicken Skewers

¾ cup plain yogurt

¼ cup lemon juice

¼ cup vegetable oil

4 cloves garlic, minced

2 teaspoons tomato paste

1 ½ teaspoons salt

1 teaspoon dried oregano

¼ teaspoon ground black pepper

¼ teaspoon ground allspice

¼ teaspoon ground cinnamon

⅛ teaspoon ground cardamom

2 pounds skinless, boneless chicken breast halves - cut into 2 inch pieces

2 onions, cut into large chunks

1 large green bell pepper, cut into large chunks

1 cup chopped fresh flat-leaf parsley
Instructions

In a large bowl, combine yogurt, lemon juice, olive oil, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom. Add the chicken, tossing to coat evenly. Transfer to a resealable plastic bag, press out the excess air, and seal. Refrigerate for 4 hours to marinate.

Preheat the grill to medium-high heat and lightly oil the grate.

Thread the marinated chicken, onions, and bell peppers onto metal skewers.

Grill the skewers for about 5 minutes on each side until the chicken is golden and cooked through. Garnish with fresh parsley before serving.
