Grilled Steak Tips with Savory Mushroom Sauce

2 ½ pounds sirloin tips, uncut

½ (750 milliliter) bottle Burgundy wine

2 (14.5 ounce) cans beef broth

4 portobello mushroom caps, sliced

¼ cup butter

1 clove garlic, chopped

½ teaspoon dried thyme

¼ teaspoon salt, or to taste

½ teaspoon ground black pepper, or to taste

1 shallot, finely chopped

2 tablespoons all-purpose flour
Instructions

Preheat the grill to medium-high heat.

In a large skillet, melt butter over medium-high heat. Sauté shallots until soft and translucent. Add mushrooms and cook, covered, until they darken, about 5 minutes.

Remove mushrooms and set aside. Deglaze the pan with one can of beef broth and Burgundy wine. Increase the heat and bring the mixture to a boil. Let it boil until reduced by a third.

Grill the sirloin tips on the preheated grill to your preferred doneness. Season with salt and pepper if desired. Remove from the grill and set aside.

Once the sauce has reduced, add the remaining can of beef broth, garlic, and thyme. Bring back to a boil and cook for 5 to 10 minutes, allowing it to reduce further. The sauce should be thin like au jus. Whisk in flour to thicken, and continue to cook until the sauce reaches your desired consistency. Taste and adjust seasoning, if needed. Stir in the cooked mushrooms. Serve the steak tips topped with the mushroom sauce.
