Grilled Swiss Cheese and Apple Sandwich

2 slices whole wheat bread

1 ½ teaspoons olive oil

½ medium Granny Smith apple - peeled, cored and thinly sliced

⅓ cup shredded Swiss cheese
Instructions

Heat a skillet over medium heat.

Lightly coat one side of each slice of bread with oil. Place one slice, oiled-side down, into the heated skillet. Layer apple slices over the bread, then add Swiss cheese and top with the second slice of bread, oiled-side up. Cook for 2 to 3 minutes per side, until the bread is golden and the cheese is melted.
