Rinse the beans, then place them in a large stockpot. Add cold water and let them soak overnight or for at least 8 hours. Once soaked, drain and rinse the beans again.

Place the beans back into the stockpot. Add the ham, onion, sugar, parsley, and cayenne pepper. Pour in enough water to cover the ingredients, and season with salt and pepper to taste.
