Ham Fried Rice

4 green onions, chopped

1 cup cubed ham

1 cup frozen mixed peas and carrots

4 large eggs, beaten

4 cups cold cooked rice

1 cup bean sprouts

3 tablespoons soy sauce

1 teaspoon salt

½ teaspoon ground black pepper
Instructions

Heat oil in a large skillet over medium-high heat. Sauté green onions for 1 minute, then add ham, peas, carrots, and beaten eggs. Stir until the eggs are fully cooked. Add cold rice and bean sprouts, and continue cooking, stirring until the rice is heated through. Remove from heat and season with soy sauce, salt, and pepper to taste.
