Healthy Egg White Casserole

1 (32 ounce) container egg whites

⅓ cup nonfat plain Greek yogurt

1 pinch salt and ground black pepper to taste

1 (8 ounce) package sliced fresh mushrooms

1 small onion, chopped

2 ½ cups cooked turkey sausage crumbles (such as Jimmy Dean®)

1 plum tomato, chopped

2 cups shredded Cheddar cheese
Instructions

Preheat your oven to 350°F (175°C) and lightly grease a casserole dish with nonstick spray.

In a bowl, whisk together egg whites, yogurt, salt, and pepper. Pour the mixture into the prepared dish.

Bake in the oven for about 10 minutes, or until the eggs begin to set.

While the eggs bake, sauté mushrooms and onions in a pan for 5-10 minutes until tender. Layer the sautéed vegetables, sausage crumbles, and chopped tomatoes over the partially set eggs, then top with Cheddar cheese.

Return to the oven and bake for another 10-15 minutes, or until the eggs are fully set and the cheese is melted.
