Ingredients

1 ½ cups water

½ teaspoon salt

¾ cup uncooked brown rice

3 tablespoons butter

1 ½ cups chopped onion

1 clove garlic, minced

2 carrots, sliced
-
2 cups fresh sliced mushrooms

1 cup chickpeas
-
2 eggs, beaten
-
freshly ground black pepper

¼ cup chopped fresh parsley

¼ cup chopped cashews
Directions

Bring 1-1/2 cups of water to a boil, add the rice, and bring it back to a boil. Cover the pot and let it simmer for 45-50 minutes, or until the rice is tender.

About 20 minutes before the rice is done, melt the butter in a large skillet over medium heat. Add the onions and sauté them until softened. Stir in the garlic and carrots, cooking for another 5 minutes.

Add the mushrooms to the skillet and cook until browned, about 10 minutes. Then, stir in the chickpeas and cook for an additional minute.

Once the rice is ready, pour the eggs into the skillet and cook, stirring constantly, until the eggs are fully set. Remove the skillet from heat and stir in the pepper, parsley, and nuts.

Add the cooked rice to the skillet and mix everything well. Serve the pilaf hot, with soy sauce on the side for extra flavor.
