How to Master Grilled Baby Back Ribs
Plan for about one pound of baby back ribs per person. If the ribs come with a tough membrane along the backbone, feel free to remove it yourself or ask your butcher to take it off.
- Preheat your gas grill to high heat, or arrange charcoal on one side of the grill to create both a hot and a cool side.
- Mix up your dry rub (see recipe below) and generously coat both sides of the ribs.
- Wrap the ribs in foil and place them on the cooler side of the grill, cooking over indirect heat for 1–1½ hours.
- While the ribs cook, make the barbecue sauce (see recipe below).
- Unwrap the ribs—they should begin to pull away from the bones.
- Transfer the ribs to the hot side of the grill, cooking directly over the heat for 10 to 15 minutes, flipping every few minutes to allow the meat to caramelize.
- In the final five minutes, brush the ribs with barbecue sauce on both sides.
- Remove the ribs from the grill and let them rest for 10 minutes. Slice between the bones and serve with extra sauce on the side for dipping.
