In a large saucepan, bring water and salt to a boil. Gradually pour the polenta into the boiling water, whisking continuously to prevent lumps from forming.

Lower the heat and let the polenta simmer, whisking frequently, until it begins to thicken, about 5 minutes. The mixture should remain slightly loose. Cover and cook for 30 minutes, whisking every 5 to 6 minutes. Once the polenta becomes too thick to whisk, stir with a wooden spoon. The polenta is ready when it’s creamy, and the grains are tender. Cooking time may vary based on the polenta grind.

Remove from heat and gently stir in 2 tablespoons of butter, allowing it to partially melt. Then, incorporate 1/2 cup of Parmigiano-Reggiano cheese until fully melted. Cover and let the polenta rest for 5 minutes to thicken.
