1 (4 pound) whole chicken, rinsed

1 lemon, halved

Instructions

Preheat the oven to 450°F (230°C).

Place the chicken in a roasting pan and stuff the cavity with lemon halves. Coat the outside of the chicken with kosher salt.

Roast the chicken in the preheated oven for about 1 hour, or until the skin is golden brown and crisp, the juices run clear, and a meat thermometer inserted into the thickest part of the thigh (without touching bone) reaches 160°F (70°C). Let the chicken rest for 15 minutes before carving.
