Instant Pot Lasagna: A Quick & Savory Meal

Instructions
Set your multi-cooker (like an Instant Pot) to the Saute mode. Heat the olive oil and add the ground beef with salt. Cook, breaking it up with a spatula, until it is browned, about 6 minutes. Transfer the beef to a bowl, then clean the pot and return it to the machine.
Pour 1 1/2 cups of water into the pot and place the metal trivet inside.
Place lasagna noodles in a 6-inch springform pan. Pour 1/3 of the tomato sauce over the noodles, followed by 1/3 of the cooked beef and 1/3 of the fresh spinach. Add half of the mozzarella cheese on top. Repeat the layers with half of the goat cheese, then repeat once more, finishing with the remaining mozzarella and goat cheese on top.
Cover the lasagna loosely with aluminum foil. Gently lower it onto the trivet. Close and lock the lid. Set the cooker to high pressure according to the manufacturer’s instructions, and set the timer for 20 minutes. Allow 10 to 15 minutes for pressure to build, then release the pressure naturally as per the manufacturer’s instructions, which may take 10 to 40 minutes. Unlock and remove the lid.
Place the oven rack about 6 inches from the heat source and preheat the broiler.
Transfer the springform pan carefully onto a baking sheet. Broil for about 5 minutes, or until the cheese on top is lightly browned and bubbling.
Recipe Tip
If you prefer, you can use regular lasagna noodles instead of no-boil noodles.
