Instant Pot Pork Carnitas
Ingredients Needed

1 (6 pound) pork butt roast

1 ½ tablespoons salt

1 tablespoon dried oregano

2 teaspoons ground cumin

1 teaspoon ground black pepper

½ teaspoon chile powder

½ teaspoon paprika

2 tablespoons olive oil, or more to taste

1 cup orange juice

1 onion, coarsely chopped

4 cloves garlic, diced, or more to taste
Instructions
Remove any excess fat from the pork butt, then cut the meat into 2-inch cubes and place in a large mixing bowl.

In a small bowl, mix together salt, oregano, cumin, black pepper, chili powder, and paprika. Rub the spice blend onto the pork cubes. Lightly coat the seasoned pork with olive oil and transfer to a pressure cooker. Add orange juice, onion, and garlic over the pork.

Pour orange juice over the pork cubes and add onion and garlic on top.

Secure the lid on the pressure cooker and bring to full pressure over medium heat. Cook until the pork is no longer pink in the center, about 60 minutes. Allow the pressure to release naturally for 15 minutes.
