Season the pork chops with garlic powder, seasoned salt, oregano, onion powder, and black pepper.

Set your Instant Pot to the Sauté function. Melt butter in the pot, then brown the pork chops, cooking for 2-3 minutes per side until crispy. Work in batches if necessary. Remove the chops and set aside. Pour in vegetable broth and scrape up any browned bits from the pot's bottom.

Place a trivet at the bottom of the pot and stack the pork chops on top, ensuring they are not submerged in the liquid to preserve the seasoning. Seal the lid, set the pressure valve to Sealing, and cook on high pressure for 8 minutes. Wait 10-15 minutes for pressure to build.

Let the pressure release naturally for at least 10 minutes before removing the pork chops. Allow them to rest while you prepare the gravy.

Activate the Sauté function again. Stir sour cream into the broth and simmer for 10-15 minutes, stirring occasionally, until the gravy thickens and reduces by half. Pour the gravy over the pork chops and serve.
Helpful Tips
Skipping the browning step is an option, but it will result in less flavor in your dish.
In a pinch, you can stir in 1 tablespoon of flour, brown rice flour, or another thickening agent to speed up the gravy's thickening process.
To make ahead: Place the pork chops in a freezer-safe bag or container. Mix all the seasonings in a small bowl and pour over the chops, ensuring they are well-coated. Label and seal the container, then freeze for up to a month.
