Instant Pot Savory Meatloaf
Ingredients List
For the Meatloaf:

2 pounds ground beef

Instructions
Prepare the meatloaf: In a large bowl, combine the ground beef, breadcrumbs, diced onion, grated apple, egg, garlic powder, salt, and pepper. Stir well until all ingredients are thoroughly mixed.

Form the beef mixture into a loaf shape and place it onto a large sheet of aluminum foil. Fold the foil around the edges to create a makeshift pan that will hold the meatloaf together.

Add 1/2 cup of water to the bottom of a pressure cooker (like an Instant Pot). Position the steam rack inside with the handles facing up, then place the meatloaf on top. Secure the lid, seal the vent, and set the cooker to high pressure according to the manufacturer's guidelines. Set the timer for 25 minutes and allow 10-15 minutes for the pressure to build.

Position the oven rack approximately 6 inches from the broiler and preheat the oven's broiler.
Carefully release the pressure from the cooker using the quick-release method, following the manufacturer's instructions, which takes about 5 minutes. Once safe, remove the lid. Transfer the meatloaf, still on the rack, to a baking sheet and broil until the top is golden brown, about 5 minutes.

While the meatloaf is broiling, prepare the topping by mixing together ketchup, mustard, and brown sugar in a small bowl.

Brush the topping onto the meatloaf and return it to the broiler for an additional 1 to 2 minutes, until the topping is caramelized.
