Instant Pot Spanish Rice

1 ½ cups low-sodium chicken stock

½ cup tomato sauce

Instructions
Power on your Instant Pot or another multi-function pressure cooker. Select the sauté setting and adjust the heat to medium.
Coat the bottom of the pot with avocado oil. Sauté the onion, stirring occasionally, until softened, about 4 to 5 minutes. Add garlic and cook for another 30 seconds, until fragrant.

Add the rice to the pot and stir to coat with oil, allowing it to lightly brown. Pour in the chicken stock and scrape up any browned bits from the bottom of the pot.

Stir in tomato sauce, salt, cumin, and cayenne pepper to combine the flavors.

Secure the lid on the pot, lock it in place, and seal the vent. Choose the high-pressure setting and set the timer for 7 minutes. Allow 10 to 15 minutes for the pressure to build up before cooking begins.
Carefully release the pressure using the quick-release method as per the manufacturer's guidelines, which should take about 5 minutes. Once done, unlock and remove the lid. Give the rice a good stir before serving.
