Instant Pot Ultimate Beef Stew

1 pound beef chuck, cut into 1-inch cubes

4 Yukon Gold potatoes, cubed

1 ½ cups mushrooms, halved

1 onion, cut into 6 wedges

2 carrots, cut into 1/2-inch thick slices

3 cups beef broth

1 tablespoon tomato paste

Prepare all necessary ingredients before you begin.

Start by turning on your Instant Pot or other multi-function pressure cooker and selecting the Sauté mode. Melt butter in the pot, then brown the beef chuck cubes in batches, cooking for about 5 minutes on each side until golden.

Return the browned beef cubes to the pot. Add in the potatoes, mushrooms, onions, carrots, and garlic. Pour in the beef broth, then stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary.

Seal the lid and lock it in place. Set the cooker to the Meat/Stew function as per the manufacturer's instructions and set the timer for 35 minutes. Allow 10 to 15 minutes for the pressure to build up.
Release the pressure using the natural-release method, following the manufacturer's guidelines, which should take between 10 to 40 minutes. Unlock and remove the lid once the pressure has released.
