Prepare the dough: In a bowl, mix flour, 1 ½ teaspoons of curry powder, and salt. Cut in butter and shortening until the mixture forms coarse crumbs.

Dotdash Meredith Food Studios
Gradually add water and stir until the mixture forms into a dough ball.

Form the dough into a log and divide it into 10 equal portions. Roll each portion into a 6-inch circle (about 1/8 inch thick) on a lightly floured surface; set them aside.

To prepare the beef filling: In a skillet, melt butter over medium heat. Sauté onions and chopped Scotch bonnet pepper until soft, about 2 minutes. Add the ground beef and season with 1 teaspoon of curry powder, allspice, ground cloves, thyme, pepper, and salt. Cook, stirring frequently, until the beef is browned evenly, around 8 to 10 minutes. Crumble in the bouillon cube and stir in 1/2 cup of water and browning sauce until well mixed; add the bay leaf and simmer until the liquid has reduced. Remove from heat, discard the bay leaf, and mix in the bread crumbs.

Spoon an equal portion of the beef filling onto the center of each pastry circle.

Fold the pastry over the filling to form a half-moon shape. Press the edges together and seal with the back of a fork, then brush the tops with beaten egg. Arrange the pastries on a baking sheet.

Place the patties in the preheated oven and bake for about 30 minutes, or until golden brown.
