Kotlet Schabowy (Polish Crispy Breaded Pork Chop)
Ingredients List
-
2 boneless pork chops
-
salt and freshly ground black pepper to taste
-
1 tablespoon all-purpose flour
-
1 egg
-
5 tablespoons bread crumbs
-
2 tablespoons vegetable oil, or as needed
Instructions
Place the pork chops between two sheets of plastic wrap on a flat, sturdy surface. Use the flat side of a meat mallet to pound them evenly, turning occasionally until they’re very thin. Season both sides with salt and pepper.
Spread the flour on a large plate. In a shallow bowl, whisk the egg. Place the breadcrumbs in a separate shallow dish.
Coat the pork chops in flour, then dip them into the whisked egg. Finally, cover the chops with breadcrumbs on both sides, shaking off any excess coating.
Heat oil in a large pan over medium-high heat. Add the breaded pork chops and cook until golden and crispy, about 5 minutes on each side.
Cooking Tip
If you prefer, you can fry the pork chops in lard for an extra-rich flavor.
