Lasagna Alfredo Roll-Ups

8 lasagna noodles

1 tablespoon olive oil

1 (10 ounce) package frozen chopped spinach

2 tablespoons thinly sliced green onion

1 pint part-skim ricotta cheese

¼ cup grated Parmesan cheese

21 ounces Alfredo-style pasta sauce

1 cup shredded mozzarella cheese
Instructions
Bring a large pot of salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes, or until al dente. Drain and rinse with cold water to stop the cooking process.
In a large skillet, heat oil over medium heat. Add spinach (or broccoli) and green onions, cooking until tender, stirring frequently. Remove from heat and mix in ricotta cheese, Parmesan, salt, and egg until combined.
Preheat the oven to 375°F (190°C).
Lay cooked noodles flat on a sheet of wax paper. Spread a portion of the cheese mixture over each noodle, then roll them up tightly, starting from the shorter edge.
Spread about three-quarters of the Alfredo sauce in the bottom of an 8x12-inch baking dish. Arrange the rolled noodles, seam side down, in the dish. Top with mozzarella and the remaining Alfredo sauce. Cover loosely with foil and bake for 30 minutes or until bubbly and the cheese has melted. Serve warm.
