Lemon Butter Baked Chicken Thighs

4 (8 ounce) skin-on, bone-in chicken thighs

Instructions
Preheat your oven to 375°F (190°C).
Place 3 tablespoons of butter in a microwave-safe bowl and heat in the microwave for 1 to 2 minutes until fully melted. Crush garlic cloves using the side of a chef's knife, then add them to the melted butter. Stir in lemon juice and onion powder; set the mixture aside.

Season both sides of the chicken thighs with salt and pepper. Heat the remaining 1 tablespoon of butter in a medium oven-safe skillet over medium-high heat. Brown the chicken, skin-side down, for 3 to 4 minutes. Flip the chicken and brush the skin with the lemon-butter mixture. Pour the rest of the butter mixture into the skillet and remove from heat.

Bake the chicken in the preheated oven until the meat is no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted near the bone should read 165°F (74°C). Brush the chicken skin with pan juices every 10 minutes.

Remove the skillet from the oven and transfer the chicken to a serving platter. Drizzle with pan juices and garnish with fresh parsley.
