Hearty Pork Chop Soup

3 cups chicken broth

2 (8 ounce) bone-in pork chops

2 tablespoons soy sauce

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon garlic powder

1 large bay leaf

¼ cup flour

3 medium potatoes, peeled and cubed

1 medium carrot, diced

2 stalks celery, diced
Cooking Instructions

In a large stockpot, bring the broth, water, pork chops, soy sauce, paprika, oregano, garlic powder, salt, pepper, chili powder, and bay leaf to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for 1 hour. Afterward, remove the pot from heat. Transfer 3/4 cup of the cooking liquid to a 2-cup measuring cup and set aside. Let the pork chops rest on a cutting board for about 20 minutes to cool down.

Whisk the flour into the reserved cooking liquid and set this mixture aside. Once the pork chops have cooled, remove and discard the bones, then shred the meat or cut it into bite-sized pieces.

Add the potato, broccoli, carrot, onion, celery, and shredded pork into the stockpot. Bring the mixture to a boil. Stir in the flour mixture, reduce the heat, and allow it to simmer for an additional hour.

Remove the bay leaf, then gently mash the potatoes in the soup. Serve hot and enjoy!
